Winter is coming

Can you believe it? December is around the corner and it has gotten really cold outside – Winter is definitely coming sooner than in some TV-Shows.
With it comes not only cold and long nights but also Christmas time. In Austria this calls for so-calles Christkindlmärkte which are basically Christmas markets where people drink lots of hot punch, eat cookies and other baked goods.
One recipe that nearly every household has to offer during Christmas time are Linzer Sandwich Cookies which are basically two cookies made of short pastry stuck together with some jam.
Easy, but soo delicious.

Normally they taste quite buttery and though we didn’t even use any vegan butter we somehow got the taste right. Neither of us is 100% sure how this happened but we’re happy it did. We used coconut fat instead which surprisingly does not at all taste like coconut.

Anyways, you may have to try this one yourselves as we can only brag so much with our newest creations until you get tired of us. So go on, we’re waiting.

Vegan Linzer Sandwich Cookies
Linzer Sandwich Cookies are traditional Austrian Cookies which are mostly consumed during christmastime. Also, they taste amazing.

Instructions
  1. Melt the coconut fat and combine flour, baking soda, salt and vanilla in a bowl.
  2. Add the melted coconut fat and syrup. Stir until smooth.
  3. If the mixture is a little too liquid you can either put it in the freezer for a few minutes or cool it in the fridge for a couple of hours.
  4. Knead the dough with some flour and cut out some biscuits leaving holes on the upper parts of the cookies.
  5. Bake at 150°C for about 12 minutes, let them cool and stick two halves at a time with jam together.
