  1. First things first, if you want to make your own pumpkin puree you have to peel and cut the pumpkin into pieces.
  2. Spread the pieces on a baking tray covered in baking paper and bake for 15 minutes at 150°C - until soft.
  3. Puree the pumpkin pieces.
  4. Combine all ingredients in a bowl and mix.
  5. Put coconut oil in a hot pan and bake around 6 pancakes. (Once there are bubbles on the top of the pancakes you can turn them.
  6. Decorate with maple or agave syrup.
