As far as vegan cheese goes this is the parting of the ways. We understand those who completely pass on vegan cheese because it does taste different. Some brands do a very good job with consistency and others taste-wise but only few can combine both factors.

When thinking about veganism you wouldn’t believe cheese sauce would be a thing, right? Well, it kind of is. And it’s surprisingly really tasty. Of course, it doesn’t actually taste like cheese. That’s basically impossible without chemicals. But the consistency is similar. And the taste – it is even better than those artificial cheese sauces you get with your ready-to-serve mac and cheese.

It so incredibly good and that’s not even a bit exaggerated. You HAVE to try it.
Who thought sweet potatoes and a few spices could be such and awesome combination?

Vegan Macaroni and Cheese

  1. Cook macaroni in salted water until they are done, drain them and set them aside.
  2. While cooking the macaroni you can also cook the sweet potatoes in salted water until they are soft.
  3. Combine the sweet potato pieces, garlic powder, onion powder, soy milk/ water, lemon juice, salt, nutritional yeast and oil in a food processor and mix until smooth.
  4. Add a little more liquid or nutritional yeast if necessary.
  5. Pour the 'cheese' sauce over the macaroni and enjoy!
